雞肝醬 chicken liver pate

 
 


鮮雞肝三兩副 (120g 左右)
牛油 90g (分三份), 其一份做 clarified butter
乾蔥頭, 蒜頭, 拍碎
cognac 或 dry sherry 或 brandy 都可
sage 或 thyme 都可
bay leave 一塊
鹽, 黑胡椒粒


  • 新鮮雞肝買回來, 去筋, 洗淨抹乾
  • 小火加入牛油, olive oil, 下蔥頭, 蒜, 及香料爆香
  • 下雞肝慢火煎兩面, 撒鹽及黑椒碎, 煎至中間切開呈淡粉紅色, 不見血水, 取出
  • 不要 overcook, 如過熟打起醬來會乏幼滑
  • 攢酒至酒精蒸發掉
  • 取出雞肝, 香草扔掉
  • 雞肝及剩餘汁液包括蒜及蔥頭, 加入一份牛油倒入 blender 打混
  • 此時可試味, 味道調略咸, 因冷卻後味道就剛好
  • 雞肝醬盛入小碗中, 鋪平, 面放一條小香草裝飾
  • 最後倒入 clarified butter 封面, 待數天味道混和後更好吃.
  • clarified butter 做法係將牛油加熱至液態狀, 去了表面泡沬就成

pouring brandy ------> do it when the pan is dried; so that brandy will catch fire and leave an aftertaste in the food *****important ********

Pesto sauce


Made pesto sauce this morning based on BBC's and Jamie Oliver's recipes.

Ingredients:
  • pine nuts, 50 gm, lightly toasted
  • parmegiano reggiano cheese, grated, 50 gm
  • basil leaves, a punch
  • garlic clove, one crushed
  • salt, a pinch
  • olive oil, 80 gm  --------  down to 50gm is sufficient
  • lastly, added 3 anchovies
 Note:
  • olive oil - BBC's recipe calls for 150gm.  I find 50gm is enough just to blend everything together. 
  • 80gm oil is too oily
  • smell very fresh and good
  • made a pizza and pasta with pesto sauce immediately but I don't find either particularly delicious

焗南瓜 creamy baked pumpkin


焗爐預熱至200度C

南瓜去籽去皮,切粗塊
灑下適量海鹽、百里香和橄欖油拌勻
放入焗爐內,焗約 30分鐘

焗南瓜的時候,放一半帕瑪森芝士在鮮忌廉中,加豆蔻粉拌勻

當南瓜焗完 30分鐘,開始軟身,拿出來,
淋上忌廉混合物在南瓜上面,灑下其餘一半的芝士
再放入焗爐中,焗 10分鐘
看到表面微黃,有少許泡泡出現,即成

lemon curd


Recipe adapted from Joe Pastry :

Ingredients (in bracket 3/4 portion):
egg yolks :  4 (3)
sugar :  142 gm (107 gm)
lemon juice :  92 gm (70 gm)
soft butter : 57 gm (43 gm)
lemon zest : 2 teaspoons
pinch of salt

add 142 gm of sugar to egg yolks and mix well
add lemon juice, pinch of salt to the egg mixture and mix well
add soft butter to the mixture
heat it (or use double boiler) until it reaches 91 deg C **
sift it through before adding lemon zest


** I cannot cook it to this temperature before it looks ready already. Read from another's writing that when 1st bubble appears, it should be ready; or test it by drawing a line at back of a spoon

My lemon curd is a little overcooked;
hence looks thick and especially so when freezed.
Otherwise, it tastes excellent with an after-taste of lemon in my mouth.
 
Spread on toast, add into yoghurt,
or fold into whipped cream as lemon mouse




Note:

-  Made a patch today, and it is 11 years after !!!! since I wrote the above note. My God !!  What have I done in these 11 years?  Not much ?!

-  Today's patch I heated it direct over the stove, until it is thick, and perhaps overcooked!  

-  Apart from a little thick than desired, it tastes wonderful, and now in the fridge.  Made a desert cup, and one yohgart small glass.
